The Story
Colombia's Huila region sits in the southwestern Andes at elevations between 1,400 and 2,000 meters. Some of the most coveted coffee-growing terrain in the world. The altitude slows cherry development, building complexity and sweetness that you can't rush. Patroness, our current Keyholders offering, comes from a small cooperative of family farms near San Agustín. These producers have been farming this land for generations, and it shows in the consistency of the cup. Every lot is hand-sorted and wet-processed on raised drying beds. We roasted this one medium to let the origin speak. Lighter roasts can chase brightness; we wanted that cocoa richness to hold. Pull it as an espresso or brew long and slow, it handles both.
